Sexy Salads : Cold Soba Noodle Salad with Japanese Dressing
Since I try to stay on a budget and watch what I eat, I tend to make a lot of salads. I try to get creative to avoid boring meals that leave me craving a hoagie instead. This one is definitely a winner. The soba noodles quench that carb craving without the guilt of a bowl of spaghetti, and the omega-3-loaded avocado keeps me full. I had this with Jamie Oliver’s Japanese Dressing. Quite easy and very delish. It was last night’s dinner, but I can’t wait to eat it again for lunch today!
- Spring Mix
- Pickled Green Tomato – homemade, courtesy of my buddy Steph!
- Mandarin Oranges (no sugar added version- no one needs that heavy syrup they tend to pack fruit in)
- Cold Soba Noodles
- Sprinkle of Sesame Seeds
- 2 1/2 oz Onion, finely chopped
- 3 TBSP Soy Sauce
- 2 TBSP Rice Vinegar
- 1/2 tsp Sugar (i used Splenda)
- 1/4 tsp Mustard Powder
- 1 TBSP Grapeseed Oil
- 1 TBSP Sesame Oil
- Salt + Pepper, to taste
Mix all ingredients in a jar and shake to combine. Add in 2 TBSP water and shake again. Enjoy!
